Roast Turkey Pinwheel Logs

  1. Place a sheet of plastic wrap on work surface.
  2. Working with one bread slice at a time, set on top of plastic.
  3. Arrange turkey slices on top.
  4. Spread mustard in a strip along long side of bread closest to you and arrange 6 gherkin halves on top of mustard.
  5. Starting with long edge closest to you, tightly roll up bread and filling jelly-roll style, without squeezing too hard.
  6. Wrap tightly in plastic wrap.
  7. Repeat with remaining bread.
  8. Refrigerate at least 30 minutes to firm.
  9. Using a sharp knife, trim off ends of roll and then cut each into 6 slices.
