Macrobiotic Banana Bread with Rice Flour

  1. Mash the bananas and mix with the ingredients.
  2. In a separate bowl, mix together all of the ingredients except for the topping ingredients.
  3. Add the wet ingredients from Step 1 to the dry ingredients from Step 2, and mix until evenly combined.
  4. Pour the batter into a pound cake mold, top with brown cane sugar and crushed walnuts, then bake for 40 minutes at 180C.
  5. When you insert a skewer and it comes out clean, it's cooked through.
  6. Wrap in aluminum foil until it cools to give it a moist finish.
