Macrobiotic Banana Bread with Rice Flour
- 2 Bananas
- 70 ml Soy milk
- 2 tbsp Canola oil
- 2 tbsp Brown sugar
- 150 grams Rice flour
- 30 grams Almond flour
- 2 tsp Baking powder
- 2 pinch Salt
- 1 Brown cane sugar (for topping)
- 1 Walnuts (for topping)
- Mash the bananas and mix with the ingredients.
- In a separate bowl, mix together all of the ingredients except for the topping ingredients.
- Add the wet ingredients from Step 1 to the dry ingredients from Step 2, and mix until evenly combined.
- Pour the batter into a pound cake mold, top with brown cane sugar and crushed walnuts, then bake for 40 minutes at 180C.
- When you insert a skewer and it comes out clean, it's cooked through.
- Wrap in aluminum foil until it cools to give it a moist finish.
