Apple Pancake Recipe
- 3 Tbsp. Butter
- 4 x Large eggs
- 1 c. Lowfat milk
- 1 c. Flour
- 1/2 tsp Salt TOPPING
- 1 lb Tart apples
- 4 Tbsp. Sugar
- 1/4 tsp Grated nutmeg
- 1/4 tsp Grnd cinnamon
- Heat butter in 12 frying pan in 450 degree oven.
- In blender mix together Large eggs, lowfat milk, flour & salt till smooth.
- Pour batter into Warm pan.
- Return to oven & bake About 10 min.
- Pancake will puff up & get large bubbles.
- Pierce with a fork.
- While pancake is baking, heat 2 Tbsp.
- butter in frying pan over medium-high heat.
- Add in apples & saute/fry till soft add in sugar, nutmeg & cinnamon.
- Saute/fry about 4 min.
- When pancake is cooked, remove from oven.
- Spoon apple topping over center.
- Slice into wedges to serve.
- Either sprinkle on maple syrup or possibly sugar & serve with lemon wedges to squeeze over slices.
- Approximately 15-18 min.
