Cheese Scalloped Carrots
- 12 sliced, pared medium carrots
- 1/4 c. butter or margarine
- 1 small onion, minced
- 1/4 c. flour
- 1/2 lb. shredded sharp Cheddar cheese
- 1/4 tsp. Dijon mustard
- 3 c. fresh bread crumbs
- 2 c. milk
- 1/8 tsp. pepper
- 1/4 tsp. celery salt
- 1 tsp. salt
- Heat oven to 350u0b0.
- Cook carrots and set aside.
- Gently cook onion
- in
- the butter for 2 to 3 minutes.
- Stir in flour, salt, mustard
- and
- then milk.
- Cook, stirring, until smooth. Add pepper and celery salt.
- In a buttered, 2 quart casserole, arrange a layer of carrots and then a layer of cheese.
- Repeat until both are used.
- Pour on sauce and top with bread crumbs. Bake, uncovered, 25 minutes or until golden.
- Serves 8 people.
