Chilled Lentil SaladA Very Heart-Healthy Salad.

  1. Bring the water to a boil in a 3-quart saucepan.
  2. Add the lentils and boil for 15 minutes.
  3. Drain, remove the lentils to a mixing bowl, and chill for 15 minutes in the freezer.
  4. Add the tomatoes and celery.
  5. In another bowl, combine the oil, lemon juice, garlic, Italian seasoning, salt, and pepper for a dressing.
  6. Pour the dressing over the lentils and toss to coat.
