Italian Sausage & Rice
- 1 Tablespoon Extra Virgin Olive Oil
- 1/2 Yellow Onion (large) Roughly Chopped
- 1/2 Green Pepper (Large) Roughly Chopped
- 2 cloves Garlic, Minced
- 1 pound Hot Italian Turkey Sausage (Casing Removed)
- 1 cup Quick-cook Brown Rice
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Oregano
- 1 can (15 Oz. Size) Italian Tomatoes With Juice
- 1- 1/4 cup Chicken Stock
- Heat the oil over medium heat in a heavy bottom skillet or pot.
- Add onion and peppers and cook until tender.
- Add garlic and turkey sausage.
- Break sausage into smaller pieces as it browns.
- Once the sausage is completely browned add uncooked rice and spices to into the skillet.
- Mix well and cook the rice for about a minute then add the can of tomatoes/juice and chicken stock.
- Mix well and bring it to a boil.
- Once it begins to bubble reduce heat to low and let it simmer for 10 minutes or until liquids have absorbed and rice fluffs with a fork.
