Microwaved Gorgonzola Garlic Chicken

  1. Cut the chicken on the diagonal, and lightly rub in the salt, grated garlic, and olive oil.
  2. Cut the parchment paper into a square and place the canned tomatoes in the center.
  3. Place the chicken on top of the tomatoes and sprinkle with pieces of Gorgonzola cheese.
  4. Sprinkle black pepper on top.
  5. Bring the front and back corners together and twist both ends several times.
  6. Place onto a heat-resistant plate and microwave for 2 1/2 - 3 minutes.
  7. When done, keep it in the parchment paper and place it on a plate to serve.
  8. As seen in the back of the photo, I turned this into a pasta sauce.
  9. If using it as a pasta sauce, it tastes great if you use a little extra Gorgonzola cheese, or add Parmesan cheese.
