Chicken Taco and Rice
- 1 lb boneless chicken breast
- 2 tablespoons oil
- 1 (13 ounce) can chicken broth
- 1 (14 ounce) can tomato sauce
- 1 (1 1/4 ounce) package taco seasoning mix
- 1 (12 ounce) can corn (drained)
- 1 12 cups Minute Rice (uncooked)
- 12-1 cup sharp cheddar cheese (graded)
- 1 (14 1/2 ounce) bag tortilla chips (Restaurant type)
- Saute CHICKEN in OIL until done (does not have to be brown).
- Stir in CHICKEN BROTH, TOMATO SAUCE, TACO MIX (dried from pkg) & CORN.
- Bring to a boil,.
- Cover and simmer for 5 mins (stir occasionally).
- Stir in RICE, cover and remove from heat (let stand 5 minutes).
- Sprinkle CHEESE on top and serve with TORTILLA CHIPS.
