Tender Boiled Pork with Korean Dressing

  1. Put the pork into a pot and fill with water until just covered.
  2. Add the sake, garlic, and leek.
  3. When it begins to boil, cover with a lid and boil for 20 minutes on medium heat.
  4. Once boiled, leave the meat in the water until it cools.
  5. Combine the ingredients in a container.
  6. Mince the Japanese leek.
  7. Remove the meat from the water and cut into 3-5mm thick slices.
  8. Arrange on a plate and top with julienned cucumber, leek, and white sesame seeds.
  9. Wrap with your choice of vegetables and dip in the sauce.
  10. I recommend using a heavy 3-layered, 5-layered, or Le Creuset type pot.
