Thai Style Dip

  1. Heat oil in a small saucepan over a medium heat and cook onion and garlic 5 minutes or until softened.
  2. Stir in chilli, ginger, lemon grass, lime leaf and coriander and cook a further 2-3 minutes over a medium-low heat until fragrant.
  3. Add Philly*, peanut butter, coconut milk and lime juice.
  4. Stir over a low heat until smooth.
  5. Chill.
  6. Serve with a drizzle of sweet chilli sauce.
