Black Beans and Sausage
- 1 tbsp. cooking oil
- 1 md. onion, chopped
- 1 can (14-1/2 oz.) stewed tomatoes
- 1 can (15 oz.) black beans, undrained
- 1 tsp. dried oregano
- 1/2 tsp. garlic powder
- Salt, to taste
- 1-1/2 cup instant brown rice, uncooked
- 1 lb. pork sausage links, cooked and sliced
- In a skillet, heat oil.
- Cook onion until tender.
- Add the tomatoes, beans and seasonings.
- Bring to a boil.
- Stir in rice; reduce heat and simmer 5 minutes.
- Add sausage and let stand, covered, 5 minutes.
