Apple Nut Coffee Cake
- 1/2 cup vegetable shortening
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups flour, all-purpose
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sour cream
- 2 cups apples finely chopped
- 1/2 cup nuts chopped
- 1/2 cup brown sugar packed
- 1 teaspoon cinnamon ground
- 2 tablespoons butter melted
- Preheat oven to 350F (180C).
- In mixing bowl, cream together shortening and sugar.
- Add eggs and vanilla, beat well.
- Combine flour, baking powder, baking soda and salt.
- Add to creamed mixture, alternating with sour cream.
- Fold in apple.
- Spread batter in greased 13 X 9 X 2" baking pan or large greased bundt pan.
- Combine nuts, brown sugar, cinnamon and butter.
- Sprinkle nut mixture evenly over batter.
- Bake 350F (180C) for 35 to 40 minutes.
