Cranberry Dumplings

  1. Preheat oven to 375 degrees.
  2. Meanwhile make the filling.
  3. In a saucepan place berries.
  4. In a bowl mix together 3/4 cup of the sugar and 1 tablespoon of flour and then sprinkle over the berries.
  5. Then add the water and vanilla and bring to a boil.
  6. Reduce heat just to keep the berries warm.
  7. Now make the dumplings: In a large bowl sift together remaining flour, baking powder, nutmeg and salt.
  8. Then add the remaining 1/4 cup of sugar.
  9. In another bowl mix together the milk and eggs and then add to the dry ingredients until just blended.
  10. Pour the mixture into an 8-inch square baking pan.
  11. Using a tablespoon, drop the cranberry mixture onto the batter.
  12. Place in the oven and bake for 25 to 30 minutes.
