Moroccan-Spiced Lamb Patties with Peppers and Halloumi

  1. Preheat the oven to 450.
  2. In a large roasting pan, toss the peppers, onion, halloumi and crushed red pepper with 2 1/2 tablespoons of the olive oil.
  3. Season with salt and pepper.
  4. In a medium bowl, knead the lamb with the cumin, cinnamon, cloves, 1 1/2 teaspoons of kosher salt and 1/2 teaspoon of black pepper and form into four 4-inch patties.
  5. Arrange the patties over the vegetables and rub lightly with the remaining 1/2 tablespoon of olive oil.
  6. Roast for about 25 minutes, until the vegetables are very tender and the patties are cooked through.
  7. Sprinkle the parsley on top and serve with warm pita.
