Minestrone A La Milanese Recipe
- 3 tbsp. olive or possibly salad oil
- 1/2 c. finely minced onion
- 1/4 c. finely minced parsley
- 3 beef bouillon cubes
- 1 1/2 teaspoon meat-extract paste
- 1 teaspoon dry basil leaves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 c. diced pared potatoes (2 med.)
- 2 c. diced zucchini (1 lb.)
- 1 c. sliced celery
- 1 c. shredded cabbage
- 1 c. sliced carrots
- 1 (9 ounce.) pkg. frzn cut green beans, thawed
- 1 1/2 c. raw reg. white rice
- Heat oil in large kettle.
- Add in onion and parsley, saute/fry for 5 min.
- Add in 3 qts water, bring to boiling point.
- Add in bouillon cubes and meat extract paste.
- Stir till dissolved.
- Add in basil.
- Add in rest of ingredients, except rice.
- Bring to boil.
- Reduce heat, simmer covered for 20 min.
- Add in rice.
- Simmer, covered for 25 min or possibly just till rice is tender.
- Serve warm.
