Meatless Creamy Taco Soup

  1. In a large pot, heat oil.
  2. Saute onion and garlic for about 5-6 minutes or until soft.
  3. Add the tomatoes w/ green chilies and vegetable juice.
  4. Bring to a boil.
  5. Add the beans, corn, cumin, cayenne, sugar, pepper, and salt.
  6. Reduce heat, cover and simmer for 20 minutes.
  7. Remove from heat and stir in the cream cheese until melted.
  8. Serve garnished with crushed corn chips and/or cheese and/or cilantro.
