Pesto Tortellini with Scallops
- 1 Tbsp. oil
- 3/4 lb. scallops
- 1 pkg. (9 oz.) DI GIORNO Three Cheese Tortellini
- 2 cups assorted cut-up vegetables (such as broccoli, red peppers and carrots)
- 1/2 cup DI GIORNO Basil Pesto Sauce
- Heat oil in large nonstick skillet on medium heat.
- Add scallops; cook and stir 2 to 3 min.
- or until no longer translucent.
- Meanwhile, bring 4 qt.
- water to boil in large saucepan.
- Add pasta.
- Reduce heat to medium-low; cook 2 min., stirring frequently.
- Stir in vegetables; continue cooking 3 min.
- Drain pasta; place in medium bowl.
- Add scallops and pesto sauce; mix lightly.
