Quesadillas de flor de calabasita
- 4 bunch flor de calabasa aka squash flowers
- 1 shredded mozzarella cheese or queso oaxaca
- 2 chopped serrano chiles
- 1 chopped small onion
- 2 tsp corn oil
- 1 salt to taste
- 1 corn tortillas
- Add oil to fry pan and heat
- Remove stem and insides of flowers and clean carefully with damp towel
- Place onions and chiles to oil and sautee until onions become transparent
- Add flowers to fry pan with other ingredients and sautee until flowers start to wilt.
- Add salt to taste.
- Heat tortillas on griddle flip once add about 2tbsp shredded cheese to each and 1tbsp of the flower mixture.
- Fold tortilla over and cook until cheese melts flipping as necessary.
