Black Eyed Peas And Barley Recipe
- 2 can (16 ounce) black-eye peas, rinsed & liquid removed
- 1/8 tsp Salt
- 1 c. Minced onions
- 1/4 tsp Pepper
- 1/2 c. Minced celery
- 1/4 tsp Dry thyme
- 1/3 c. Uncooked barley
- 1/4 tsp Dry rosemary
- 1 c. Water
- 1/4 tsp Garlic pwdr
- 1 x Bay leaf, broken in half
- This is a quick & EASY one using canned beans from the Lean Luscious &
- It works well for New Year's Day
- (Could substitute 2 c. soymilk for 1 c. water)
- Preheat oven to 350.
- Lightly oil a 1 3/4 Quart casserole, or possibly spray w/ Pam.
- In large bowl, combine all ingred.
- Place in casserole, cover tightly, bake 1 1/4 hrs.
- Stir once, halfway through cooking time.
- Throw away bay leaf before serving.
