Earl Famous Seafood Gumbo Recipe
- 1/2 c. flour
- Sufficient oil to make roux wet
- 1-1 1/2 pound sliced okra
- 2 white onions, minced
- 1 lg. or possibly 2 med. cans tomatoes
- Celery salt to taste
- Garlic pwdr to taste
- Zataran's crab boil in liquid or possibly bag
- Salt to taste
- Cayenne red pepper to taste
- Raw shrimp, crab or possibly crabmeat, chicken or possibly anything else
- With flour and oil make a roux; dark brown.
- Stir constantly to avoid burning.
- Add in soy sauce or possibly Kitchen Bouquet to help darken faster.
- Add in hot water slowly to the dark roux, stirring constantly to avoid lumping.
- Add in onions to roux and simmer about 5 min.
- Okra should be simmered till no longer stringy - don't burn!
- May take 30-45 min.
- Add in roux, okra, onion, tomatoes and spices in large pot and add in 4-5 qts of water.
- If you use the bag crab boil, be careful not to burst the bag and only leave it for about 1 hour.
- Allow this to simmer about 2 hrs stirring sometimes (minimum 1 1/2 hrs).
- After 1 1/2-2 hrs, add in the meat and allow to cook 30-45 min for seafood or possibly 1-1 1/2 hrs for chicken.
- Don't over cook seafood.
