Impossible Pie
- 4 eggs
- 1/2 cup plain flour
- 1 cup caster sugar
- 1 cup desiccated coconut
- 125 grams butter, melted
- 300 ml thickened cream
- 3/4 cup milk
- 1 tbsp finely grated lemon rind
- 1/4 cup lemon juice
- Preheat oven to moderate.
- Grease straight-sided deep 19cm-square cake pan
- Whisk egg in large bowl.
- Gradually whisk in flour and remaining ingredients till well combined.
- Pour mixture into prepared pan
- Bake uncovered in moderate oven about 45 mins or until pie is browned and set.
