Taco Roll Ups
- 1- 1/4 pound Ground Turkey
- 3 Tablespoons Homemade Taco Seasoning (Or 1 Oz. Packet Store Bought)
- 1 Egg, Mixed With 1 Tablespoon Water
- 12 Egg Roll Wraps
- 1 cup Low-Fat Shredded Cheese
- 1 Medium Onion, Diced
- 1 cup Salsa
- Optional Toppings (See Instructions For Suggestions)
- Preheat oven to 400 degrees F. Line a baking sheet with foil or Silpat.
- Brown turkey and add taco seasoning.
- Let simmer until thoroughly browned.
- Remove from heat.
- Make egg wash by mixing the egg with 1 tablespoon water; beat.
- Set aside.
- Place an egg roll wrap on a cutting board so its in the shape of a diamond.
- With a pastry brush, brush the inner edges of the egg roll wrap with egg wash.
- Add turkey, cheese, onion, salsa and whatever other fillings you choose to the center of wrap.
- Pick up the bottom point and fold it over the filling, squeezing it slightly in the center to ensure a tight roll.
- Then bring a side point over the center and repeat on the other side.
- Roll the wrap up towards the top point.
- To complete the roll, bring the top point down and press into the center.
- Place on lined baking sheet.
- Brush each roll with remaining egg wash. Run your finger along the seams to be sure they stay sealed.
- Bake for 20 minutes or until rolls are golden brown.
- Top with toppings.
- Some topping suggestions: sour cream, homemade guacamole, salsa, cilantro, extra cheese, beans, etc.
