Marinated Broccoli & Black Eye Pea Salad Recipe
- 1 lg. bunch broccoli, cut into sm. pcs
- Juice of 1 lemon
- 1 (1 lb.) can black eye peas, drain & rinse
- 1 med. red onion, cut into thin slices
- 1 med. bell pepper, minced
- Red wine vinaigrette
- Steam broccoli over water and lemon juice 5 to 7 min, till tender but still crisp.
- Remove from steamer and combine with remaining ingredients, tossing to coat well.
- Cover and chill at least 4 hrs, tossing every so often.
- Red Wine Vinaigrette: 1/2 c. red wine vinegar, 2 Tbsp.
- Dijon mustard, salt and pepper, 1 c. extra virgin olive oil.
- Combine all ingredients in a bottle, cover and shake well.
