Marinated Broccoli & Black Eye Pea Salad Recipe

  1. Steam broccoli over water and lemon juice 5 to 7 min, till tender but still crisp.
  2. Remove from steamer and combine with remaining ingredients, tossing to coat well.
  3. Cover and chill at least 4 hrs, tossing every so often.
  4. Red Wine Vinaigrette: 1/2 c. red wine vinegar, 2 Tbsp.
  5. Dijon mustard, salt and pepper, 1 c. extra virgin olive oil.
  6. Combine all ingredients in a bottle, cover and shake well.
