Oatmeal cottage cheese apple pancakes

  1. Put all ingredients except apple in blender and blend until smooth.
  2. Take cored apple and thinly slice using mandolin
  3. Dip single slice of apple in batter and cook on griddle.
  4. Flip.
  5. Enjoy!
  6. So easy, so good, and so healthy!
  7. Gluten free too!
