Chocolate-Orange Mousse

  1. Combine orange rind, sugar, egg yolks, and eggs in conatiner of an electric blender; process until frothy.
  2. Add chocolate and orange juice; process well.
  3. Fold in whipped cream.
  4. Pour mixture into individual serving dishes, and chill until set.
  5. Garnish each serving with additional whipped cream and mandarin orange slices.
