Quick Ratatouille

  1. Put the oil in a deep frying pan over high heat.
  2. Add the peppers, onion, garlic, squash and eggplant.
  3. Cook 5 minutes, stirring frequently.
  4. Add the tomato and cook about 3 minutes.
  5. Add the sausage, herbs, and salt and pepper to taste.
  6. Cook for 3 minutes.
  7. Serve over rice.
