Chicken Stuff
- 2 pounds Chicken (fryer)
- 4 stalks Celery
- 1 jar Pimentos
- 1 can Mushrooms
- 3 Tablespoons Butter
- 1/4 cups Flour
- 1/2 packages Saltines
- Cook a fryer and after it is cooled, cut in bite-sized pieces.
- Dice 4 stalks of celery and boil in 2 cups of water until tender.
- Remove the celery and put in the baking dish with the cut-up chicken; reserve the celery water.
- Add a jar of mushrooms and pimentos, drained, to the baking dish with the chicken and celery.
- Melt 3 TBL.
- of butter in a saucepan.
- Add about 1/4 cup of flour and cook for 2 minutes, then slowly add the celery water to make a gravy.
- Pour this over the chicken and veggies and mix; add salt and pepper to taste.
- Crush 1/2 package of saltines, sprinkle on top, then add a few pats of butter.
- Bake at 350F until hot.
