Picadillo Beef Arepas

  1. Heat dressing in large skillet on medium-high heat.
  2. Add meat, peppers and onions; cook 10 min.
  3. or until meat is browned, stirring occasionally.
  4. Drain.
  5. Stir in tomato sauce; bring to boil.
  6. Add raisins and capers; simmer on medium-low heat 15 min.
  7. or until no liquid remains, stirring occasionally.
  8. Meanwhile, mix masarepa and water in large bowl until blended.
  9. Add egg and 1/2 cup cheese; mix well.
  10. Let stand 5 min.
  11. Divide dough into 8 equal pieces.
  12. Shape each into ball, then flatten to 4-inch patty, moistening hands with water as necessary to prevent sticking.
  13. Cook patties (arepas), in batches, on hot griddle sprayed with cooking spray on medium-high heat 8 to 10 min.
  14. on each side or until golden brown on both sides.
  15. Split arepas; fill with meat mixture and remaining cheese.
  16. Top with avocados.
