Gluten Free/Sugar Free Strawberry Shortcake

  1. Preheat oven to 375`F.
  2. Grease a 12 muffin pan.
  3. In a large bowl cream butter and splenda and stevia using mixer.
  4. Add the eggs, egg white and vanilla.
  5. Beat until slightly thickened.
  6. Add baking powder, cornstarch and baking powder slowly while mixing.
  7. Mix until well blended.
  8. Fill the bake for 15 minutes.
  9. (Test with a toothpick).
  10. Remove from the pan while still warm.
  11. Serve topped with strawberries and whipped cream.
