Cheese Substitute Made with Sakekasu
- 2 grams Powdered kanten
- 50 grams Sakekasu (sake lees)
- 200 ml Water
- 1/2 tbsp Olive oil
- 1 tbsp Lemon juice
- 1 tbsp White miso
- 1/2 tsp Salt
- 1 tbsp Honey (optional)
- Put the mixture A into a pot and cook on high heat to let the alcohol evaporate.
- (I cook it for about 10 minutes because I want most of the alcohol to evaporate)
- When finished heating the mixture, combine in mixture B.
- (If you use a whisk to mix, you end up with a smooth surface)
- Pour the mixture into a tray or vat.
- Leave it to harden.
- When hardened, slice it with a knife.
- Crunchy and chewy.
