Black and Blue Meatloaf

  1. Preheat oven to 325AF.
  2. In a large skillet over medium heat melt the butter then add the red onions.
  3. Cook for about 10 minutes.
  4. Add mushrooms and cook for an additional 5 minutes or until onions are golden brown and caramelized.
  5. In a large bowl combine ground beef, egg, Worcestershire sauce, panko bread crumbs, cheese, Blackened Seasoning, and the mushroom and onion mixture.
  6. Shape the mixture into a rectangular loaf on a sheet pan covered with foil.
  7. Bake in the oven for 1 hour (maybe more if needed).
  8. Combine melted butter and hot sauce to make buffalo sauce.
  9. Top meatloaf with sauce and serve immediately.
