Black and Blue Meatloaf
- 1 tbsp butter
- 1/2 large red onion, diced
- 2 portabella mushrooms, diced
- 1 lb ground beef
- 1 cup crumbled bleu cheese
- 1 tbsp Worcestershire sauce
- 1/4 cup panko bread crumbs
- 3 tbsp Zatarains Blackened Seasoning
- 1 egg, whisked
- 4 tbsp hot sauce
- 4 tbsp unsalted butter, melted
- Preheat oven to 325AF.
- In a large skillet over medium heat melt the butter then add the red onions.
- Cook for about 10 minutes.
- Add mushrooms and cook for an additional 5 minutes or until onions are golden brown and caramelized.
- In a large bowl combine ground beef, egg, Worcestershire sauce, panko bread crumbs, cheese, Blackened Seasoning, and the mushroom and onion mixture.
- Shape the mixture into a rectangular loaf on a sheet pan covered with foil.
- Bake in the oven for 1 hour (maybe more if needed).
- Combine melted butter and hot sauce to make buffalo sauce.
- Top meatloaf with sauce and serve immediately.
