Lentil Patties with Mango Mayonnaise

  1. Heat half of the oil in a large saucepan.
  2. Add carrot, onion, curry powder and garlic.
  3. Cook over a medium heat for 3-4 minutes until softened.
  4. Add stock and lentils.
  5. Simmer covered for 15 minutes until tender and stock has been absorbed.
  6. Stir through breadcrumbs and eggwhite.
  7. Allow to cool slightly.
  8. Divide mixture into 8 and form into patties.
  9. Lightly dust each patty with flour.
  10. Heat remaining oil in a large non-stick pan.
  11. Cook patties for 4-5 minutes each side until golden.
  12. Remove to absorbent paper.
  13. Mix together the mayonnaise, sour cream, chutney and milk until smooth.
  14. Serve with patties along with a crisp salad.
