Lentil Patties with Mango Mayonnaise
- 1 tablespoon light canola oil
- 1 carrot, grated Target 2 lb For $3.00 thru 02/06
- 1/2 onion, finely chopped or grated King Sooper's 1 lb For $0.99 thru 02/09
- 1 tablespoon curry powder
- 1 clove garlic, crushed
- 2 cups salt reduced vegetable or chicken stock
- 1 cup red lentils
- 1 cup fresh wholemeal breadcrumbs
- 1 egg white, lightly beaten
- wholemeal flour for dusting
- 1/4 cup KRAFT FREE Mayonnaise
- 2 tablespoons light sour cream
- 1 1/2 tablespoons mango chutney
- 1 teaspoon reduced fat milk
- Heat half of the oil in a large saucepan.
- Add carrot, onion, curry powder and garlic.
- Cook over a medium heat for 3-4 minutes until softened.
- Add stock and lentils.
- Simmer covered for 15 minutes until tender and stock has been absorbed.
- Stir through breadcrumbs and eggwhite.
- Allow to cool slightly.
- Divide mixture into 8 and form into patties.
- Lightly dust each patty with flour.
- Heat remaining oil in a large non-stick pan.
- Cook patties for 4-5 minutes each side until golden.
- Remove to absorbent paper.
- Mix together the mayonnaise, sour cream, chutney and milk until smooth.
- Serve with patties along with a crisp salad.
