Popeye Burgers with Homemade Thousand Island Dressing
- 1 bag (16 Oz. Size) Frozen Spinach, Thawed, Drained, And Moisture Squeezed Out
- 2 Egg Whites
- 1 whole Egg
- 1/4 cups Finely Diced Onion, Shallot Preferred
- 1/2 cups Shredded Cheddar Cheese
- 1/2 cups Bread Crumbs (panko Or Regular)
- 1/2 teaspoons Garlic Powder
- 1 teaspoon Salt
- 1 Red Onion, Thinly Sliced Or Diced
- 4 Buns (or Option To Serve Over Mixed Greens)
- 4 Slices Cheese
- 1/2 cups Mayonnaise
- 2 Tablespoons Ketchup
- 2 teaspoons Apple Cider Vinegar
- 1/2 teaspoons Garlic Powder
- 1/2 teaspoons Onion Powder
- 1/4 teaspoons Salt
- Chop the thawed and drained spinach into bite size pieces.
- Mix it with the next 7 ingredients (eggs through salt) in a bowl.
- Shape into 4 equal sized patties and cook over medium high heat in a non-stick skillet or stove top griddle coated with olive oil or cooking spray.
- Grill your onions at the same time!
- Cook burgers for 3-4 minutes on each side until golden and firm.
- Cook onions until softened and caramelized to your liking.
- Remove patties from the skillet and place on a bun.
- Top with cheese, onions and thousand island dressing.
- For the dressing: Mix all ingredients together.
- Enjoy!
- Notes: This recipe can be easily doubled.
- Also, they can be made ahead of time and frozen for quick meals in a pinch!
