Popeye Burgers with Homemade Thousand Island Dressing

  1. Chop the thawed and drained spinach into bite size pieces.
  2. Mix it with the next 7 ingredients (eggs through salt) in a bowl.
  3. Shape into 4 equal sized patties and cook over medium high heat in a non-stick skillet or stove top griddle coated with olive oil or cooking spray.
  4. Grill your onions at the same time!
  5. Cook burgers for 3-4 minutes on each side until golden and firm.
  6. Cook onions until softened and caramelized to your liking.
  7. Remove patties from the skillet and place on a bun.
  8. Top with cheese, onions and thousand island dressing.
  9. For the dressing: Mix all ingredients together.
  10. Enjoy!
  11. Notes: This recipe can be easily doubled.
  12. Also, they can be made ahead of time and frozen for quick meals in a pinch!
