Mom's Ginger Tots
- 1 cup butter
- 1 14 cups brown sugar
- 2 eggs, well beaten
- 3 12 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon lemon flavoring
- 2 teaspoons powdered ginger
- 14 teaspoon salt
- 4 tablespoons butter
- 2 teaspoons lemon juice
- 2 cups icing sugar
- Cream butter and sugar thoroughly.
- Add eggs.
- Whisk together flour, baking soda, cream of tartar, salt and ginger.
- Mix into butter mixture.
- Add flavoring, then work and knead.
- Chill in fridge.
- Form into small balls the size of marbles.
- Place two inches apart on well greased sheet; press with fork and bake at 375F for 8-10 minutes.
- ICING: Combine butter, lemon juice and icing sugar; spread between cookie halves.
