Almond Scones Recipe
- 2 c. all purpose flour
- 1/3 c. sugar
- 1 tsp baking pwdr
- 1/2 tsp salt
- 1/2 c. chilled shortening cut into pcs
- 1/4 c. chilled unsalted butter cut into pcs
- 1/3 c. lowfat sour cream
- 1 lrg egg
- 3 tsp almond extract
- Heat oven to 400 degrees.
- Mix first four ingredients in food processor.
- Add in shortening and butter and pulse till mix resembles course meal.
- Whisk lowfat sour cream, egg, and almond extract in a small bowl and add in to flour mix.
- Pulse into dough just forms ball, then turn out onto lightly floured surface.
- For dough into 15" by 3" rectangle.
- Cut into six squares, then cut each square diagonally into triangles.
- Dough will be very sticky.
- Place scones on heavy baking sheet sprayed with butter-flavor cooking spray.
- Bake till puffed and pale golden brown, about 15 min.
- Cold on rack.
- Can be frzn, wrapped in foil.
