Flora's Low Carb Enchiladas
- 1 lb Ground Chicken
- 1 bell pepper
- 1 onion
- 1 lemon
- 1 tbsp ground cumin
- 1/2 tbsp corriander
- 1 tbsp paprika
- 1 dash cayenne pepper
- 1 package of 8 Mission Brand Carb Control Tortillas
- 1 28 ounce can Green Enchilada Sauce
- 1/2 cup 2% Chedder Cheese
- In a skillet brown your chicken and green pepper and onion together
- When meat is cooked, add in spices and a little bit of the enchilada sauce to moisten and bring it all together.
- Scoop into the tortillas and roll to close.
- Lay in a pan, seam side down
- Pour the remaining sauce on top, then add cheese
- I topped mine with Jalepenos then put into a 350F oven until it was hot and bubbily.
- Enjoy!
- I loaded mine down with avocado, cilantro, and non fat greek yogurt.
