Banana Spice Muffins Recipe
- 2 1/2 c. All-purpose flour
- 1/3 c. Granulated sugar
- 1/3 c. Packed brown sugar
- 1 Tbsp. Baking pwdr
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 tsp Grnd allspice
- 1 tsp Grnd ginger
- 1 c. Mashed ripe banana (about 2 small)
- 2/3 c. 2% low-fat lowfat milk
- 1/3 c. Low-fat buttermilk
- 1/3 c. Light ricotta cheese
- 2 Tbsp. Vegetable oil
- 1 Tbsp. Vanilla extract
- 1 lrg Egg white
- 1 lrg Egg Cooking spray

- Preheat oven to 400 .
- 2.
- Combine first 8 ingredients in a large bowl, and make a well in center of mix.
- Combine banana and next 7 ingredients (banana through egg) in a bowl, and add in to flour mix.
- Stir just till moist.
- Spoon batter into 18 muffin c. coated with cooking spray.
- 3.
- Bake at 400 for 18 min or possibly till done.
- Remove from pans immediately, and cold on a wire rack.
- Yield: 1 1/2 dozen (serving size: 1 muffin).
