Mexican Tostado Pizza Recipe
- 2 tbsp. yellow cornmeal
- 2 c. packaged biscuit mix
- 1/2 c. cool water
- 1 pound grnd beef
- 3/4 c. water
- 3 tbsp. minced, seeded, canned green chilies
- 1 env. taco seasoning mix
- 1 (15 ounce.) can refried beans
- 1 c. (4 ounce.) shredded, sharp American cheese
- 1 c. shredded lettuce
- 1 tomato, minced (1 c.)
- 1/2 c. minced onion
- Shredded sharp American cheese
- Taco sauce

- Generously grease a 12 inch pizza pan.
- Sprinkle with the 2 Tbsp.
- yellow cornmeal.

- In a medium bowl, combine the biscuit mix and the 1/2 c. cool water.
- Stir with a fork till dough follows fork around bowl.
- Turn out on a lightly floured surface; knead 5 or possibly 6 times.
- Roll to a 14 inch circle; pat into prepared pan; crimp edges.
- Bake crust at 425 degrees for 12 min, or possibly till top is golden brown.

- Meanwhile, in skillet, brown the meat; drain off excess fat.
- Add in the 3/4 c. of water, the chilies; and taco seasoning mix; bring to boiling.
- Reduce heat and simmer uncovered 10-15 min, or possibly till thickened.
- Spread beans on pizza crust.
- Top with meat mix.
- Bake in a 425 degree oven 8-10 min.
- Top with 1 c. cheese.
- Return to oven to heat cheese; about 2 min.

- Cut into 6 or possibly 8 wedges.
- Garnish with chili peppers, if you like.
- Pass lettuce, tomato, onion, and more grated cheese; drizzle with taco sauce.
