Bean And Cheese Burritos Recipe

  1. Rinse pinto beans.
  2. In a large saucepan combine beans and water.
  3. Cover and bring to a boil.
  4. Turn heat down and simmer, covered, for 2 1/2-3 hrs till beans are soft.
  5. Don't pour off water.
  6. Turn heat off.
  7. Mash beans well in pan.
  8. In a small saucepan heat butter.
  9. Add in onion, warm pepper and garlic; cook for about 3 min or possibly till onion is clear.
  10. Add in tomato sauce and stir.
  11. Bring to a boil and turn off heat.
  12. Pour half of the tomato sauce mix into the beans and stir well.
  13. Heat tortillas.
  14. Put 1/3 c. of beans in center of each tortilla.
  15. Top with tomato sauce and cheese.
  16. Fold and bake at 300 degrees for 10 min.
  17. Makes 10 burritos.
