Lentil Patties with Tomato Sauce

  1. Combine Philly*, lentils, breadcrumbs, carrot, onion, cheese, egg, garlic and lemon rind in a bowl and mix until combined.
  2. Shape mixture into 8 patties.
  3. Heat the oil in large frying pan and cook the patties over medium heat for about 5 minutes each side, or until golden and heated through.
  4. Serve with the tomato sauce.
  5. Sauce:
  6. Heat the oil in saucepan and cook onion over medium heat for 3-5 minutes or until translucent.
  7. Add the undrained tomatoes and tomato paste then simmer for 5 minutes or until mixture is reduced and thickened.
  8. Stir in remaining ingredients until combined and heated through.
