Broccoli Bake
- 1 bunch broccoli
- 1/4 c. water
- 1/4 c. chopped green onion
- 1 Tbsp. butter
- 3 oz. cream cheese
- 1 can mushroom soup
- 1/2 tsp. lemon peel, grated
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. paprika
- Combine broccoli and water in a 2-quart casserole.
- Cover; microwave 7 to 9 minutes on High.
- Drain and arrange in an 8 x 8-inch microwave dish.
- Microwave in small dish for 1 to 2 minutes on High the onions and butter.
- Place the cream cheese in the onion and butter mixture.
- Microwave 30 to 60 seconds.
- Stir into this the soup, lemon peel, salt and pepper.
- Pour this sauce over the broccoli; sprinkle with paprika.
- Cover with waxed paper. Microwave for 5 to 7 minutes on Full power.
- Rotate dish halfway through.
- Serves 4 to 6.
