Cheesy Mushroom Spread Recipe
- 3 c. mushrooms, cleaned and diced
- 1/2 c. soda crackers, crushed
- 2 Tbsp. butter, divided
- 3/4 c. green onion, minced
- 1/2 Monterey Jack cheese, shredded
- 1/2 c. Cheddar cheese, shredded
- 2 c. cottage cheese
- 2 Large eggs
- 1/4 tsp. paprika
- 1/4 tsp. pepper
- Preheat oven to 350F degrees.
- In a skillet, saute/fry mushrooms till soft in 1 Tbsp.
- butter.
- Crush crackers well by placing into a plastic bag and breaking up with a rolling pin, or possibly process in blender.
- Add in crackers to mushrooms and stir.
- Remove from heat.
- Line the bottom of a 9" spring form pan with the cracker-mushroom mix.
- Saute/fry green onions in 1 Tbsp.
- butter till soft.
- Spread over the mushroom mix in pan.
- Sprinkle Monterey Jack and Cheddar cheese proportionately over the onions.
- Process cottage cheese, Large eggs, and cayenne pepper in a food processor.
- Pour into pan and spread proportionately.
- Sprinkle paprika on top.
- Bake in preheated oven for 25-30 min.
- Allow to cold 10-15 min before cutting into serving size pcs.
