Churros with Cinnamon Dipping Sauce

  1. Combine water, butter, 1/4 cup sugar (or 2 Tbsp.
  2. sugar for trial recipe) and salt in saucepan.
  3. Bring to boil on medium-high heat.
  4. Add flour; cook and stir until mixture pulls away from side of pan.
  5. Transfer to a bowl.
  6. Add eggs, 1 at time, beating after each until well blended.
  7. Stir in vanilla.
  8. Spoon into pastry bag fitted with large star tip.
  9. (Or spoon into churros maker.)
  10. Pipe 5-inch lengths of dough, in batches, directly into 350 degrees F deep fryer.
  11. Fry until golden brown; drain on paper towels.
  12. Combine 2 cups sugar (or 1 cup sugar for trial recipe) and cinnamon.
  13. Add warm churros, 1 at a time, tossing until coated.
  14. Serve 1 churro with about 2 Tbsp.
  15. DELIGHTS.
