Holiday Sweet Potato Casserole

  1. Boil sweet potatoes until you can easily stick a fork in them,
  2. Drain the potatoes and mash , I personally prefer to whip them with a hand mixer.
  3. Add granulated sugar, 1/2 cup of the butter, eggs, vanilla, spices, milk, oj and bourbon if desired, and mix well.
  4. Spread in a 9 x 13 baking dish.
  5. For the topping: melt the remaining butter, add brown sugar, flour, pecans, and coconut.
  6. Mix well.
  7. Spread over the top of the sweet potatoes and bake at 350 degrees for approximately 30 minute If the coconut starts to get too brown, cover it with foil.
