Tuna and White Bean Salad (Volumetrics)
- 3 tablespoons lemon juice
- 2 tablespoons water
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1 teaspoon Dijon mustard
- 12 teaspoon salt
- fresh ground black pepper
- 1 cup canned cannellini beans, drained and rinsed
- 12 cup chopped red onion
- 14 cup pitted chopped Nicoise olive
- 2 cups peeled seeded, and diced tomatoes
- 3 cups Baby Spinach
- 1 (12 ounce) can solid white tuna, drained and flaked
- Whisk the lemon juice through the pepper in a large bowl.
- Add the rest of the ingredients to the bowl and toss to coat with dressing.
