Uncle Don's Baked Fish Creole

  1. Preheat oven to 350F (175C).
  2. Melt butter over medium-low heat in large, heavy skillet; saute onion, green pepper and garlic, until soft, about 5 minutes.
  3. Add flour and mix well; continue cooking, stirring often, until flour has browned a bit, about 1 minute.
  4. Add tomato sauce, parsley, bay leaf, thyme, salt and pepper.
  5. Gradually stir in hot water.
  6. Cover and cook over low heat for 30 minutes.
  7. Arrange fish in shallow baking pan; cover with sauce.
  8. Bake for 25 to 30 minutes.
  9. Remove bay leaf prior to serving.
  10. Note: Any firm-fleshed white fish can be substituted for orange roughly in this recipe.
