Irish Oatmeal Bread
- 3 cups sifted all-purpose flour
- 1-1/4 cup quick rolled oats
- 1-1/2 tbsp. baking powder
- 1 tbsp. salt
- 1 egg
- 1/4 cup honey
- 1-1/2 cup milk
- 1 tbsp. butter (cover bread with butter 1/4 hour before finished baking)
- Preheat oven to 350F.
- Grease bread pan well (I use olive oil, dusted with flour).
- In large bowl, mix flour, oats, baking power, and salt.
- In a medium bowl, with egg beater, beat honey, egg and milk to mix well Pour the mixture together, mix with wooden spoon until mixture is moist.
- Spread batter in pan, bake one hour and fifteen minutes or until crusty and tester inserted comes out clean.
- Remove from oven and pan.
- Cover with butter above and let set.
