Oatmeal Raisin Bars
- 2 cups flour
- 2 cups quick-cooking oats
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 cup margarine or butter, softened
- 1-1/2 cups packed light brown sugar
- 1/2 cup cholesterol-free egg product
- 1 tsp. vanilla extract
- 1 cup seedless raisins or reduced fat chocolate-flavored baking chips
- Mix flour, oats, baking soda and cinnamon; set aside.
- Blend margarine or butter, brown sugar, egg substitute and vanilla in large bowl with mixer at medium speed until smooth.
- Gradually stir in flour mixture.
- Stir in raisins or chips.
- Spread mixture into lightly greased 13 x 9 x 2-inch baking pan.
- Bake at 350F for 25 minutes.
- Cool completely; cut into bars to serve.
