Blueberry Muffins (Diet) Recipe
- 2 c. all-purpose flour
- 1/3 c. sugar
- 4 tbsp. baking pwdr
- 1/4 c. butter
- 1/4 c. Eggbeaters
- 1 c. skim lowfat milk
- 1 teaspoon vanilla
- 1 c. fresh or possibly frzn blueberries
- Combine flour, sugar and baking pwdr; cut in butter.
- Combine Eggbeaters, lowfat milk and vanilla and stir into flour mix just till moistened.
- Stir in blueberries.
- Spoon into 12 greased 2 1/2 inch muffin pan c.. Bake at 400 degrees for 25 min or possibly till done.
- Let cold in pan 5 min.
- Remove and serve hot, if you like.
