Monaco's Light Roasted Pepper Lime Dressing
- 1 roasted red pepper
- 3 garlic cloves
- 2 limes, juice and zest of
- 1 tablespoon grainy mustard
- 3 tablespoons honey
- 1 tablespoon miso (or sake)
- 14 cup sherry wine vinegar
- 13 cup canola oil
- to taste salt, and
- hot chili flakes
- Puree the pepper and garlic in a food porcessor, then add everything but the oil and puree.
- Add oil slowly.
- Balancde the floavor with salt and hot chili flakes.
